Prawn Malai Curry or Chingri Malai Curry is a Bengali curry made from prawns & coconut milk and flavoured with spices.

Recipe:
Ingredients for Marination of Prawns: ( Marination time10 mins)
Prawn-500 gm
Salt-1/2 tsp
Turmeric Powder-1/2 tsp

Ingredients for Gravy:
Cooking Oil-2-3 tbsp
Dry Red Chilli-1
Bayleaf-1
Cinnamon-2
Green Cardamom-2
Onion Paste-2 small size onion
Ginger paste-3 tsp
Curd-3 tbsp
Salt-As per taste
Turmeric Powder-1/2 tsp
Red Chilli Powder-1/2 tsp
Sugar-1/2 tsp
Green Chilli-4-5
Coconut Milk-250 ml
Water-As required
Garam Masala-1/2 tsp

Cooking Process:
At first, marinate prawns with 1/2 tsp salt & turmeric powder & marinate it for 5-10 mins. Heat oil in a Kadai & fry prawns(both side) on medium heat for 5-7mins. Keep it aside. If oil is clean then you can reuse the oil or change it. Take 2-3 tbsp oil in a Kadai & add 1 dry red chilli, 1 bay leaf, 2 cinnamon & 2 green cardamoms. After that add onion paste & fry it on medium heat. Add ginger paste & fry 2-3 mins on low heat. Add 1 tsp salt, 1/2 tsp turmeric powder, 1/2 tsp red chilli powder, 1/2 tsp sugar & keep frying. Add a splash of coconut milk whenever the spices dry out. Add curd & cook on low heat. Fry until oil separates & add green chilli as per taste. Add rest of coconut milk & keep cooking. After that add fried prawns. Cover & cook for 5 mins & then add 1/2 tsp garam masala. Prawn Malaikari is ready. Serve it with hot rice.
